Colombia is legendary in the coffee world for its diverse range of flavors, nurtured by the country’s varied climates and altitudes. This particular single origin comes from the Nariño region, Colombia’s southernmost coffee-growing area, known for its towering mountains and rich volcanic soil. At elevations between 1,500 and 2,200 meters, the coffee plants here thrive, developing vibrant acidity and sweetness. Nariño’s unique climate, with warm air rising from lowland valleys, allows coffee to be grown at these high altitudes, creating a beautiful balance of flavors in each cup.

This coffee is produced by the FUDAM association, a cooperative of over 300 farmers who share a commitment to sustainable, organic farming. Founded in 2000 by just a handful of like-minded farmers, FUDAM’s mission has always been about more than just coffee—it’s a way of life that prioritizes environmental stewardship and community well-being. Despite pressure to adopt chemical methods, FUDAM's members continue to cultivate their crops organically, believing that their traditional farming practices respect the land and produce a richer coffee.
One of the defining characteristics of this coffee is its washed processing method, which is a staple of Colombian coffee production. After being handpicked, the coffee cherries are depulped and fermented for 16–24 hours to naturally break down the sticky mucilage layer surrounding each bean. They’re then washed clean and dried, sometimes taking up to 15 days in parabolic dryers or “casa elbas.” This method highlights the bean’s innate flavor characteristics, allowing the coffee’s natural acidity and sweetness to shine through without any interference.
