The Origin Story: Guaya'b Asociacion Civil

Nestled in the Western Highlands of Guatemala, Huehuetenango is renowned for its exceptional coffee-growing conditions. From its diverse climate and high altitudes to its pure water sources and traditional coffee varieties, this region is a treasure. The Guaya'b Asociacion Civil, a cooperative established in 1998, consists of passionate coffee and honey producers who uphold ancestral practices that honor the natural environment. This cooperative achieved Fair Trade and Organic certifications in 1999, underscoring their commitment to sustainable and ethical farming practices.

Coffee Processing: The Washed Method

The coffee is processed using the the washed method, a meticulous technique that imparts a delicious layer of flavor the the coffee. After being picked ripe, the coffee cherries are depulped and allowed to ferment for 12 to 48 hours, depending on the climate. This fermentation process is crucial for developing the coffee's distinct flavors. Once the mucilage is washed off, the beans are spread on patios or raised beds to dry, resulting in a smooth clean, well-balanced cup.
